What do downhill skateboarding, health and nutrition have in common? They combine the passions of Patrick Switzer. The world champion in downhill skateboarding from Canada took up the topics of exercise, health and nutrition after his professional sports career and founded nÿcha in Zurich 6 years ago. With nÿcha, Patrick makes his own kombucha in Switzerland.

In his sports travels around the globe, he has come to know and love kombucha and other fermented beverages such as ginger beer, making him an advocate for the healthy and refreshing drink. According to legend, the monk Kombu discovered over 2000 years ago that tea (“cha” in Chinese – hence “Kombu “+”cha”) can be transformed into a sparkling refreshing drink under the right conditions. Patrick is now bringing this tradition into the modern age with his nÿcha Kombucha.

You meet Patrick at the Provisorium in Zurich and dive into the world of a new drinking culture. From ancient tradition to modern production.

The workshop will start with a short introduction to the world of fermentation and the fascination of these microorganisms. You’ll learn exactly what ginger beer and kombucha are, what the differences are, and you’ll learn the basics of making kombucha and ginger beer – from preparing the tea to adding sugar and starter culture to fermentation.

Let your creativity run wild and combine flavors to make your own fermented ginger beer and kombucha. There will be tasting and experimentation, with Patrick only too happy to pass on his knowledge and passion to you. To complete your voyage of discovery, you will be able to taste some of nÿcha’s creations and fortify yourself with an Apéro Riche.

At the end of the workshop, you’ll take home your starter kit: a bottle of gingerberry, a bottle of kombucha, and your own kombucha mushroom. Nothing stands in the way of your future creations!
